An employee turned the faucet off with their bare hands after washing their hands. The inspector had the employee rehash their hands.
The inspector observed raw fish stored over ready to eat foods and vegetables in the tall reach-in refrigerator.
Clean plates and pans were stored as clean but were soiled dirty with food debris. Also there were glasses in the beer chest cooler that were stored as clean, but had residue and debris around the lip contact area of the glasses.

The hot water on the dish machine was at a low unsafe temperature and was also not providing the required concentration to sanitize dishes.
The cut lettuce, cut cabbage, raw chicken, cut tomatoes, pico, and tamales were being cold held at unsafe temperatures between 43-45 degrees Fahrenheit in the flip top prep cooler; the food was discarded.
